Over the years I have either created or amassed recipes that I believe to be tried and true. We create them and use them in many of our “fixins”. I use them with meat substitutes such as soy and non-vegetarians don’t even realize they are eating things like soy meat substitutes. Occasionally I will mention a meat product in these recipes, so lets be realistic to the fact that even vegetarians eat a bit of meat now and then or serve it to others in their household who do not indulge in a strict vegetarian or vegan diet.
Hot Chorizo Seasoning
Yield: ½ cup (enough to season 2 ½ pounds of soy meat substitute or lean turkey or pork sausage)
¼ c hot ground chili pepper
2 tsp garlic powder
2 tsp dried onion or onion powder
1 ½ tsp ground cumin
1 tsp dried oregano
1 tsp ground cinnamon
1 tsp salt
To make Chorizo, just combine ½ c cider vinegar and (if preferred) ¼ cup tequila with this package of seasoning and add to 2 ½ pounds of soy meat substitute or lean turkey sausage. Then cook in your favorite way.
Mild Chorizo Seasoning

1/8 c mild ground chili pepper
1/8 c cayenne
2 tsp garlic powder
2 tsp dried onion or onion powder
1 ½ tsp ground cumin
1 tsp dried oregano
1 tsp ground cinnamon
1 tsp salt
To make Chorizo, just combine ½ c cider vinegar and (if preferred) ¼ cup tequila with this package of seasoning and add to 2 ½ pounds of lean sausage. Then cook in your favorite way.
Spicy Jamaican Rub, Mon!
6 tbsp allspice
6 tbsp dried thyme
1 tsp curry powder
1 tsp sugar
1 ½ tsp. cayenne pepper
½ tsp ground cinnamon
3 tsp black pepper
1 ½ tsp nutmeg
1 ½ tsp cinnamon
1 ½ tsp salt
1 tsp ginger
1 tsp garlic
Mix together and store in an airtight container. Use as you need it on whatever it is you are cooking or in your Jamaican recipes.
Just as good as Kentucky Fried Chicken Spice
1 tablespoon rosemary
1 tablespoon oregano leaves
1 tablespoon powdered sage
1 teaspoon powdered ginger
1 teaspoon marjoram
1 1/2 teaspoons thyme
3 tablespoons packed brown sugar
3 tablespoons dry minced parsley
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
2 tablespoons chicken bouillon powder (or 4 cubes, mashed)
1 package Lipton tomato Cup-a-Soup mix
Place all ingredients in blender and pulse for 3-4 minutes to pulverize, or rub through a fine strainer. Store in an airtight container so the spices will not lose their potency. Makes about 3/4 cup.
Add 1 ounce mix to every one cup of flour for coating chicken and this works well on soy chicken or soy turkey products.
Arlene’s Dry Rub:
3 cups light brown sugar, tightly packed
1 cup kosher salt
1/3 cup chili powder
1/3 cup ground black pepper
1/3 cup cayenne pepper
1/3 cup basil
1/3 cup oregano
1/3 cup rubbed thyme
1/3 cup onion powder
Simply mix together. Use liberally. Makes 4 one pound packages.
