We have all prepared fresh vegetables for dipping. Often called “relish” trays the correct name is Crudités which is nothing more than pieces of raw vegetables, prepared simply on a large serving dish and usually surrounding a dip or a variety of dips. These are often included in a buffet or as a snack with drinks when friends drop in for a very informal evening or sometimes as an appetizer.
The Crudités usually consist of carrot, zucchini, celery and cucumber sticks, perhaps some snow peas, baby corn cobs, strips of peppers, whole radishes, cherry or grape tomatoes, button mushrooms and anything thing else that we can think of. As an artist, I usually see things in color arrays and add contrasting things such as black and green olives, cauliflower and broccoli pieces.
Now that one’s organic garden is providing many of these veggies it might be a good idea to add Crudités to one’s dinner table at least one meal a day as a good healthy addition. I remember putting such a tray on a table in the year 2000 and three of my grandsons ranging from ages 3 to 5, running slightly amok on their bikes in the driveway, using endless amounts of energy, kept running over and devouring about two thirds of these raw vegetables and even dunking them into the dips. These were the same guys who really did not want to be served cooked vegetables. The raw vegetables are packed with good nutrition and have not been cooked or preserved to death.
Often, to this day, Carl and I will have a simple evening meal of Crudités and each with our favorite dip. I always add the current vegetable in abundance or on sale at our local supermarket during the winter. It helps to give us our 5 colored vegetables and fruits each day, keeps me from slaving over a hot stove and trying to figure out what to cook for two old fogies who don’t eat as much as we used to and still try to maintain good health in our old age.
Many times I have added a similar tray of fresh fruits with something good to dip them into at our gatherings and one never finds anything left on those trays.
